Zhajiangmian (Chinese black bean noodles)
Always satisfying & so easy to prep in batches!
Ingredients
Green onions (for garnish)
Cucumbers (for garnish)
1lb Minced pork / ground pork
3-4 cloves minced garlic
3 “circles” soy sauce
1 “circle” dark soy
2 spoons tianmianjiang
3 spoons Chinese soybean paste
1 spoon oyster sauce
1 spoon sugar (adjust to taste)
3/4 cup water
cornstarch slurry (around 2 tbsp water to 1.5 tbsp cornstarch)
Instructions:
Julienne cucumbers and chop green onions for garnish.
Bring a pot of water to a boil. Cook your noodles of choice to desired texture. I use flat udon noodles or Chinese knife cut noodles most of the time.
While noodles cook, mix zhajiang sauce by combining soy sauce, dark soy, tianmianjiang, soybean paste, oyster sauce, and sugar.
Saute minced garlic in oil. Then add in minced pork and cook til brown. Add in sauce and cook with pork for a few minutes. Finally add in water and cornstarch slurry to thicken the sauce.
Strain noodles & rinse under running tap water for a chewier texture.
Plate noodles in bowl and spoon some sauce on top. Garnish with green onions & cucumber slices and enjoy!
